Recipe makes about 1 ½ cups.
So today, I set out to make my son (and us) some hummus. But after opening the pantry and grabbing a tin of chickpeas I soon realized that they were butter beans - eek!
Instead of racing to the shop to get chickpeas, I thought I’d test the butter beans as a replacement… and, booya! This baby is a winner! Super smooth, scrummy, and yummy. So much so, my son, Ardon ran away with the spatula when I gave him a taste test!
HUMMUS INGREDIENTS1 tin organic butter beans (drain and save the aquafaba –‘bean water’)
½ cup organic tahini
2-3 organic garlic cloves
Juice of 1 organic lemon
2 tablespoons organic white miso paste (I like the Genmai or Carwari brand)
HUMMUS COOKING METHOD
Blend the garlic and lemon juice on high in a blender or thermomix.
Scrape down the sides where the mixture will have lifted, and add the tahini, butter beans, miso paste and about 2-3 tablespoons of the aquafaba (the bean water from the butterbean tin).
Blend until smooth then add additional bean water if you desire a thinner consistency.
Serve on rice crackers, on a sandwich, with falafel, flatbread, cucumber/carrot or other veggie sticks for finger licking and dipping fun.
Miso paste is made from fermented soybeans that contain beneficial bacteria (probiotics) which are good for the gut. This is why a bowl of miso soup is eaten in Japan in the morning, as they believe it will stimulate and energise the body. Miso paste is also high in protein and essential minerals as well as B, E and K vitamins and folic acid. It’s also really yummy and the epitome of Umami.
Or Lima beans, are part of the legume family and are packed with nutrients including vitamin B, iron and protein; they are also a great source of fibre.
There is a reason garlic is said to keep vampires away. It was believed that Vampires had a disease of the blood which is what turned them into such beings. Garlic has been used for its medicinal properties for hundreds of years. Not only is it a natural blood detoxifier, it’s also an immune booster containing a little bit of everything our body needs.
Tahini is ground sesame seeds. The benefit of tahini over whole sesame seeds is the quick absorption of minerals. Sesame seeds contain good fats which help with cell regeneration and heart health. Sesame seeds are also one of the best plant-based calcium sources there is.
